Cắt nhỏ hành tím, tỏi, hành lá, sả, gừng, riềng. Sau đó, cho tất cả vào máy xay nhuyễn. Nếu không có máy xay, thì cho vào cối đem giã nhuyễn.
Trong tô lớn trộn đều 2 muỗng canh dầu hào, 1 muỗng canh nước mắm, 1 muỗng canh đường, 2 muỗng canh bột ướp xá xíu, 2 muỗng canh dầu ăn, 1 muỗng cà phê tiêu, 1 muỗng cà phê ngũ vị hương.
Thịt heo chọn những miếng có nạc và mỡ (nạc nhiều hơn). Đem rửa sạch, dùng chày đập hai bên cho thịt mềm. Cho thịt vào tô gia vị, ướp cùng thêm hỗn hợp đã xay vào, trộn đều. Để ít nhất 2 tiếng hay qua đêm cho thịt ngấm.
Xếp thịt ra khay. Lò nướng làm nóng trước 15 phút ở nhiệt độ 220 độ C. Cho khay thịt vào ngăn giữa lò nướng mỗi bên 15 phút. Khi thấy thịt chuyển màu cháy xém cạnh là thịt chín. Tắt lò lấy thịt ra.
