Nấm đông cô cắt bỏ chân, rửa sạch, cắt làm đôi, để ráo. Bí đỏ gọt vỏ, rửa sạch, cắt miếng vuông vừa ăn. Đùi tỏi gà rửa sạch, luộc gà khoảng 5 phút rồi gắp ra chén riêng. Hành lá rửa sạch, cắt nhỏ. Mè rang chín
Cho dầu ăn vào chảo, rán vàng đùi tỏi gà, thêm gừng lát mỏng, hoa hồi, chút rượu trắng và 1 muỗng canh xì dầu vào.
Để lửa nhỏ, đổ 1/2 chén nước nóng vào rồi cho bí đỏ vào đảo. Khi bí đỏ mềm thì cho nấm vào, nêm 1 muỗng cà phê muối, 1/2 muỗng cà phê đường, đảo khoảng 2 phút thì tắt bếp.
Múc ra đĩa dùng nóng với cơm, có thể rắc chút mè rang và hành lá cắt nhỏ nếu thích.
